Avocado Caprese Salad

Caprese salad

I made this salad a few weeks ago for a girl’s night with a few friends. We were making some veggie pizzas and tHis salad went really well.

Chopped Caprese salad

It’s a spin on a traditional Caprese salad, with tomatoes, basil, and fresh mozzarella. I added some sliced avocado, because I hardly eat anything without avocado, and ditched the balsamic vinegar in favor of some homemade pesto!

Dying!

Caprese salad2

It’s not a pretty rich salad so a little really goes a long way. It Can be eaten as is or over some greens to give it more a salad feel.

If you prefer the taste of a traditional Caprese salad with stick with the drizzle of balsamic Vinegar, instead of the pesto. I would suggest trying the addition of avocado though. The creamy texture really works well with the flavors of the basil, tomato, and mozzarella.

Buon Appetito!

  • 2 garlic cloves
  • 4-6 oz. fresH basil
  • Handful sliced almonds
  • 2 tbsp. extra virgin olive oil
  • Red Pepper Flakes
Instructions
  1. For the pesto:
  2. Toast the almonds in a dry skillet until lightly golden brown and fragrant.

  9. Alternate layering tomato slices with mozzarella, fresh basil, and avocado.
  10. Once all of the ingredients are layered, drizzle pesto all over the salad.
